Pesto di rucola e zucchina
Rucola and zucchine pesto is a fresh, light sauce that's perfect for pasta during the hottest days of summer. Quick and easy to prepare, it combines the bold, slightly peppery flavor of arugula with the delicate sweetness of raw zucchini, creating a wonderfully balanced taste. Not only is this pesto delicious, but it's also packed with nutrients. Arugula is known for supporting thyroid function and, thanks to its naturally bitter compounds, may help promote healthy liver detoxification. Zucchini, together with pine nuts or almonds, provides potassium and magnesium, two essential minerals that help reduce stress, support muscle relaxation, and may even contribute to better sleep.
Ingredients
- 50 g (about 2 oz) rucola
- 2 medium raw zucchinis
- ½ garlic clove
- 1 small espresso cup (about 60 ml / ¼ cup) extra virgin olive oil
- 6 almonds or 1 tablespoon pine nuts
- Sea salt, to taste
- 2 tablespoons grated Parmigiano Reggiano
- Fresh marjoram or mint (optional)
Instructions
Wash and thoroughly dry the rucola. Wash the zucchinis and cut them into small pieces. Place the rucola, zucchine, garlic, extra virgin olive oil, and the pine nuts (or almonds) into the cup of an immersion blender or a food processor. Blend for a few seconds until the mixture becomes smooth and creamy. Add the grated Parmigiano Reggiano and a pinch of sea salt. If needed, drizzle in a little more extra virgin olive oil until you reach your desired consistency. For an extra burst of freshness, you can also add a few leaves of fresh marjoram or mint. Your pesto is now ready to enjoy. If you're not using it immediately, transfer it to a glass jar and cover the surface with a thin layer of extra virgin olive oil before storing it in the refrigerator. It will keep well for a few days.
How to Serve
This pesto is best enjoyed uncooked. Toss it with freshly drained pasta, adding a splash of the pasta cooking water and a drizzle of extra virgin olive oil to create a silky, creamy sauce. For this recipe, I paired it with buckwheat pasta, which has a lower glycemic index than traditional wheat pasta. The result was absolutely delicious.
